Recipe: Poached Eggs on Whole Wheat English Muffins

Ingredients:
- 2 eggs
- 1 whole wheat english muffin
- 1 tsp. coconut oil
- Salt and pepper
- 1 cup of fruit
- Sprinkle of feta cheese (optional)
- Handful of chopped avocado (optional)
Boil water in a small-medium skillet, crack eggs into the boiling water and season with salt and pepper. Cook eggs for 2 minutes on each side for a medium runny yolk. Put the english muffin in the toaster and toast until desired toastiness is achieved. Spread the coconut oil on the english muffins. Remove the eggs and gently dry them with a paper towl. Add the eggs on top of the english muffins, top with optional feta cheese, avocado, and salt and pepper. Enjoy with a side of your favorite fruit.
